Garlicky Cherry Tomato Bombs

Cherry Tomato BAsil Garlic

After learning about the benefits of garlic yesterday, we're offering a light dish to tickle your taste buds. This garlic infused cherry tomato is the perfect aperitif partner with a white wine or rosé and as a complementary side dish with a salmon or chicken entrée.

This easy combination of garlic, tomato, olive oil and basil is high in vitamin A, C and E together with a significant amount of phytonutrients and sulfuric compounds which furthers the metabolism of iron in your body while fighting free radicals.

2 pints cherry tomatoes
3 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon rock salt
1/8 teaspoon ground black pepper
1/4 cup basil leaves
Sourdough bread or any crusty bread

1. Pre-heat oven to 200C/400F
2. Combine all ingredients in a roasting pan, except the basil
3. Roast for about 18 minutes
4. Stir occasionally until the tomatoes start to explode and caramelize
5. Add in the basil, roast for 2 minutes more
6. Set tomatoes aside
7. Rub bread with garlic and drizzle with olive oil
8. Place in the grill or toaster
9. When it’s done take them out and top with your roast cherry tomatoes and serve!
