Black Bean Brownies

Ingredients
  

  • 1 ½ C. black beans, cooked or canned and drained
  • 2 eggs
  • 1 heaping T. ground flax seed
  • 3 tablespoons coconut oil, melted
  • 1/4 cup cocoa powder
  • 1 pinch sea salt
  • ½ t. baking powder
  • 1 teaspoon almond extract
  • 3/4 cup evaporated cane juice crystals
  • 2 t. instant espresso powder
  • 1 C. dark Belgian chocolate w/almonds, chopped

Instructions
 

  • Preheat oven to 350 degrees F
  • Lightly grease an 8x8 square baking dish
  • Mash beans with a potato masher or in a food processor
  • Top with chopped chocolate
  • Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes
